07 Feb The Best Einkorn Crepes Ever

One of our favorite food products from Young Living is the einkorn flour. Einkorn is one of the oldest varieties of wheat, dating back to the beginning of time. It is not hybridized, like modern wheat. In fact, it contains only 14 chromosomes, as compared to the 42 found in modern wheat. This makes einkorn much easier to digest. It is also found to be higher in protein, essential fatty acids, phosphorous, potassium, pyridoxine, beta-carotene, Vitamin A, lutein, and riboflavin to name a few. It also makes the best einkorn crepes that you ever tasted!
You will immediately notice a difference when you eat einkorn products as compared to other hybrid wheat flours. The natural genetic code and low gluten levels make it easier to digest, so nutrients are better absorbed. One of our favorite things to make with the einkorn flour is einkorn crepes. The flavor is wonderful and we noticed that there is no bloating. We actually eat less and remain fuller, longer. Here’s our recipe so that you can enjoy them too.
Ingredients
- 1 cup einkorn flour
- ½ teaspoon salt
- 4 eggs
- 2 tablespoons maple syrup
- 1 cup whole milk
- ½ teaspoon vanilla
- 2 tablespoon melted butter
- Toppings of your choice (fresh fruit, whipped cream etc.)
Directions
- Whisk together the ingredients until fairly smooth.
- Heat a medium-sized skillet, and grease with oil.
- Pour in approximately ¼ cup of batter into the skillet. Then tilt the skillet so that the batter covers the entire pan and cook for about 30-45 seconds, until golden brown. Flip and cook for another 15 seconds, again until golden brown.
- Top your crepes with your favorite toppings such as butter and maple syrup, berries and whipped cream, or peanut butter and bananas.
This recipe whips up very quickly and will give you about 8 large crepes, depending on how thick you make them. It’s quite common to eat several crepes when they are made from wheat flour, but this is not the case with einkorn flour crepes. One will probably be all you can eat!

You can substitute einkorn flour with any all purpose or whole-wheat flour at a 1:1 ratio. The einkorn flour doesn’t tend to absorb as much liquid as the other flours, so you can reduce the liquid by about 20% if you like, or allow the batter to sit for an hour in the refrigerator before cooking. I don’t typically have the organization or patience to wait for batter to sit, and I don’t get any complaints with the results.
